John recently offered to make dinner for the two of us and he cooked up a delicious batch of steak bites. He used a mix of top sirloin steak and boneless short ribs and both were super tasty and tender when prepared this way. Simply searing the outside of small pieces in browned butter and leaving the interior very pink kept the meat super juicy and tender. We added some minced garlic after cooking the beef pieces for even more flavor (we love garlic).

THis is an all time Lau family favorite recipe that we got from a long time family friend, Rochelle. Our kids knew her by the honorific Aunt, which is a tradition for family friends on my side of the family.
We have love'd this recipe for years. Now that there are just the two of us at home we make a half batch, using one large can of tomato sauce. I've tried a few other sloppy joe recipes over the years but we keep going back to this one because it is awesome.

John and I both enjoy Chile Verde and I wanted to see how it would turn out if we used lamb instead of pork. This is my favorite recipe - in part because it cheats and uses a jar of green salsa and nothing is simpler to make. It is handy to have these super easy recipes for busy days when monitoring the progress of a meal all day just isn't an option.
We both quite liked this lamb version of Chile Verde and Tom gave it a thumbs up when he was home from college and polished off the leftovers.

Hungarian Goulash is a delicious stew (or soup) of tender beef chunks, and onions seasoned with paprika. This easy version adds tomatoes, carrots and potatoes. It can be simmered on the stove top or in the oven in a heavy dutch oven. The beef and onions would be delicious over noodles or mashed potatoes.
Two petite sirloins, cut into approx 1" cubes worked beautifully in this recipe. Our pre-cut stew meat is another great option. Cubing up a couple of chuck steaks would also work quite well.

A super simple but so tasty take on your basic pot roast. Beef chuck, sirloin tip, rump, eye of round or brisket can be used.
It can easily be prepared in a slow cooker (crock-pot) or in an Instant Pot (pressure cooker). Also great cooked in a heavy dutch oven in a low temperature oven (250 ish) for 3 or 4 hours.
