These lean roasts can be cooked in a variety of ways. They are tender enough that they can be roasted to medium rare and served sliced thin. Alternatively they make a very nice lean pot roast. When oven roasting we suggest using a lower oven temperature of 300 degrees. A digital meat thermometer with a probe you can leave in the roast comes in very useful in keeping the meat medium rare. We recommend pulling your meat at 130 degrees and letting it rise to 140 degrees as it rests.
