If you are looking for a roast to cook to medium rare and then serve as thin slices look no further! The top sirloin roast makes a fabulous family roast meal, without the expense of a standing rib roast (aka prime rib). These nicely marbled and moderately tender roasts are great roasted to 130 or 135 degrees internal temperature. The temperature will rise to about 140 or 145 degrees as it rests, before you slice it, which is beautiful rare to medium rare. We tend to use a 300 degree oven and a digital meat thermometer with a leave in probe is incredibly helpful when cooking these.
We've had good luck using indirect heat to cook these on our gas grill as well. If you are feeling especially decadent you can make some fabulous kabobs by cubing up your roast and grilling with your favorite veggies.
